Pulled Pork Cracker Stacks

It's football season and that means appetizers galore! Some people, like my husband, are more into the game, whereas I am more into the game food. What kind of game day person are you? Will you be spending it with friends watching the big game?

We normally stay in and spend our game days as a family. We lounge on the couch and cheer as loud as we want. I love to watch our 3-year-old mock his daddy when the game is going their way. That always puts a big ol' grin on my face. Oh, and we always have a snack! Sometimes I like to keep it simple with our snacks and sometimes I like to get fancy. Today is a fancy day. I think everyone loves pulled pork, right?

Ingredients

  • 1 pork shoulder 2 lb.
  • ½ tablespoon garlic powder
  • ½ tablespoon onion powder
  • 1 teaspoon black pepper
  • ¼ teaspoon cayenne pepper
  • 3 tablespoons brown sugar
  • ¼ cup apple cider vinegar
  • 2 tablespoons olive oil
  • ¾ cup water
  • 1 cup barbecue sauce
  • 8 ounces colby jack cheese sliced
  • 40 Ritz crackers

Instructions

  • Place the pork shoulder in a crock pot.
  • In a separate bowl, add in the garlic powder, onion powder, black pepper, cayenne pepper, and vinegar. Whisk together until incorporated.
  • Pour the vinegar and spice mixture into the crock pot and over top of the pork shoulder.
  • Add in the water and oil by drizzling it along side of the pork shoulder. Pouring the water over top of the pork will wash around the seasoning you just placed on it.
  • Set the crock pot to low and let it cook for 8 - 10 hours. I prepared mine the day before and placed it in the fridge overnight.
  • Shred the pork using two forks. Mine was completely cool, so I used my hands and shredded mine.
  • Pour off all the juice except for ¼ cup.
  • Add in 1 cup of your favorite barbecue sauce and stir until it coats all the meat. Place the slow cooker on low and heat until warm. Mine was completely cold, so I set mine on low for an hour.
  • I laid out 20 crackers and placed a slice of cheese on each. I then added a small pile of pulled pork to each cracker. Place them on a serving plate and help yourself!
